But, given the length of time this wine matured on lees, I'm quite surprised by the relatively light autolytic imprint. This is a complex and elegant Champagne with a wonderful combination of velvety bubbles and flavours of pear, brioche, spice and fresh walnuts.This rose has withstood the time spent on the lees and in bottle with grace and aplomb and currently shows a full set of aromas and flavours of mulberries, blood oranges, raspberries, pink lady apples, and toast. Tempered by a slow, masterful transformation during nearly 12 years in the cellar, Dom Pérignon Rosé is untamed and carnal, both light and dark, magnetic. Supremely understated, yet there is so much complexity underneath the pretty, flowery veneer: cranberries, grapefruit, and a delicate note of raspberry. Lovely nose, the red fruit aromas have moved to the darker end of the spectrum: sour cherry, plum, and reductive smokiness.
